My First Pie and Other Sensory Snapshots
I gave birth to my first child two months into the COVID-19 pandemic, and so to me, memories of this time are centered around life as a new parent. Because we live in a different state than most of our family, and because we had a newborn (whose immune systems are not well-developed the first several weeks of life) in a global pandemic, we did not go anywhere. I had a few months off of work and school to care for my son, so my experience of COVID-19 to that point was time spent just with my son. As any parent knows, those first few weeks are an exhausting blur consisting of the never-ending cycle of feeding your baby, changing them, and helping them sleep. But the sensory memories from this time of my life that have stuck with me the most involve the feeling of holding my baby; feeling his head on my shoulder, hearing his tiny little breaths and occasional squeaky coos in my ear, noticing the sweet smell of his baby shampoo on his head, feeling him stretch and reposition from time to time. Though it seemed like the days when he would sleep independently would never come, little did I know how quickly they would, and how much I would miss these quiet moments. When he started getting the hang of napping, I suddenly had these open stretches of time in my day, which I was not used to. What to do to fill this time, especially in the midst of a pandemic and with a baby to boot? Like many people, I developed a baking hobby while my little one napped. Now I associated his nap time with the sticky feel of flour and butter on my hands as I kneaded dough for soda bread, the smell of buttery, sugary deliciousness coming from the oven as scones were baking. On my husband’s birthday, I produced my most time-consuming bake so far: a strawberry rhubarb pie. This one required some cooperation on the part of my little guy, whose giggles I heard as he batted at toys in his baby swing while I chopped and prepped the filling and made the pie crust. The finished product wasn’t necessarily perfect, but I was proud of it, and the memory of making it will always stick with me since it is a representative snapshot of that moment in time, a few months into a global pandemic with my young son. -

The comforting smell of cardamom and cinnamon on a Sunday morning
One of the most defining characteristics of my quarantine has been learning how to bake. After a year and a half, I am finally comfortable kneading, proofing, and baking. I have learned the tell-tale signs of under-proofed and over-proofed bread by touch (slightly indent the bread with the end of your finger and how the dough springs-back will tell you all you need). I have learned to listen for the hollow sound of fully cooked bread. However, one of the greatest joys I have found with baking is filling the house with the smell of cinnamon, sugar, and cardamom on a Sunday morning with my slightly adjusted cinnamon roll recipe from our well-used Betty Crocker’s 1961 New Picture Cookbook (it was my mum’s before me). My family is Scandinavian, and the smell and taste of cardamom is ever-present in Scandinavian baking. Kanalsnegl, klejner, and fødselsdagboller are all delicious Danish and Norwegian cardamom classics. But Betty Crocker’s cinnamon rolls are also highly popular in my house. From this, a fusion roll was born. On Sunday mornings, the house is filled with cinnamon and cardamon of these classic buns. The Betty Crocker recipe calls for two teaspoons of cinnamon filling, but I sub one teaspoon with cardamom. I also add a pinch of cardamom to the butterscotch topping. In a time of stressful uncertainty, the smell of freshly baked rolls with cinnamon and cardamom is like wrapping up in a comfortable blanket. A tale of the babka
If you had asked me if I was a baker prior to the year 2020, I would have unequivocally said no. A cook? Yes. But a baker? Absolutely not. But that was before the global Covid-19 pandemic. I worked in the cruise industry prior to the pandemic and I travelled a lot for my job. I was not home enough to really jump into and try to master baking. Following mandatory quarantine in March 2020, I suddenly had extra time on my hands. Further, I was laid-off from my job in early June and ended-up with even more time on my hands. Like so many around the world during quarantine, I took up baking. But unlike the many who tried sourdough, I started with making standard wheat breads and then went straight to enriched breads like babkas or challahs. The photos I am attaching here show my progression as a baker. My first babka was fine and tasted great, but as you can see, I have improved in technique and in flavor over time. My favorite babka recipe comes from King Arthur Flour. As a new baker, I relied on the King Arthur Flour website for flour and yeast tips, baking tools, and recipes. I was too hesitant to add walnuts the first time and I accidently used a quick-rise east instead of standard yeast. As time went on, I felt more comfortable adding walnuts and raisins. I also felt more comfortable working with the dough to perfect the twisting technique of the babka. I relied on trial-and-error for most of my recipes, but I also watched all episodes of the Great British Baking Show and found some videos that gave me the basics of flour, yeast, and water. My family were very surprised by this newfound baking skill. But they enjoyed tasting the results. I have enjoyed bringing people together over food – and I have enjoyed giving loaves as gifts. I am still trying new bread recipes and plan on continuing to bake even as life slowly returns to our new normal. -

Silver Linings
The past year was a very hectic one. Many things changed over 2020 and overall it was a whirlwind of a year. While there are many bad things to point out about it there are some silver linings too. Due to the coronavirus, we had to quarantine for a while. This forced me to spend a lot of time with my family, but I am very thankful for this now. My brothers are 4 and 1, but I am 14. This means that in 4 ½ years when I leave for college they are going to be 5 and 9, so I need to spend as much time with them as possible before I leave and start a new life away from them. 2020 showed me how important family really is and I will no longer take it for granted. Another silver lining of 2020 was learning that I have a love for baking. When quarantine started in March I would be extremely bored because I had to stay home. I was tired of staring at a screen for so long, so I knew I had to find something to do. This is how I stumbled upon baking. I made sugar cookies for my family one time and I knew I had to continue baking. I fell in love with it. Now I use it to help me calm myself. Being in control of everything I’m doing makes me feel grounded, so even when I’m stressed about something going on in my life, baking makes me feel in control so that I can handle the situation correctly. From the outside 2020 might have been bad, but if you look for the silver linings you realize it might’ve been just the year you needed. -

Boston Lockdown
The JFK Library and Museum closed during the shutdown and I lost the best job I ever had. I graduated Boston University without a ceremony. I spent my first year in grad school on zoom. I ended up living with my 2 adult siblings and my parents who were either working virtually or not at all. I decided that I would take the time at home to learn things that I had always intended to, mostly because I didn't want to lose my mind. I baked bread, lots of bread: challah, bagels, cinnamon rolls, babka and more. I knit a complicated sweater. I sewed masks for my friends and I played games with my family. I research and organized 7 generations of my family's pictures, documents, videos and newspaper clippings. I started growing vegetables and flowers and I watched hundreds of English Premier Soccer games. The most fun I had was hanging out with my dog. For Halloween I made he and I costumes from the movie Rear Window. I feel like I did my best to survive the Plague, I am proud of all I was able to accomplish and I have more good memories than I thought was possible. I appreciate the normal things I took for granted pre-pandemic and I look forward to the end. -

That fleeting moment of Solidarity
In those first few weeks of lockdown I just remember a feeling of solidarity with my neighbors. We were all separate, all isolated, but all working toward the same goal. Throughout our neighborhood people had written with chalk on the sidewalk, we took walks every day and saw painted rocks, teddy bears sitting in windows, art and signs of hope and comfort. For a homeschool art lesson I had my sons do chalk splatter painting on our driveway and then taught them about Jackson Pollock. I wrote lyrics to Bob Marley songs and drew pictures of rainbows on the sidewalk. We baked bread, cinnamon rolls, all things warm and cozy. Our family was together in a special way, we appreciated the time together. We went on hikes and fished in the backyard pond and although there were zoom appointments and conference calls, life was moving at a slower more relaxing pace. We were hopeful and confident that by doing the right thing we were saving lives. -

A Shed of Inspiration
The object that I have presented is my Akaashi plushie from one of my favorite anime shows called Haikyu. During quarantine, I have retaken an interest back into anime. I used to watch anime when I was in middle school, but my obsession ended because I was prioritizing school more. Until my friend convinced me to watch a show called Haikyu, which was about high school volleyball and made me get hooked back into watching anime again. Although my Akasshi plushie is just a stuffed animal, it has helped me through my journey as a junior in high school because it reminds me to continue working hard. In the show, Haikyu, the team Karasuno's goal is to get to nationals and become the top school in Japan. Although they struggle to achieve their goal to reaching nationals in their first attempt, that does not stop them from continuing. They all persevere through their downfalls and eventually, they finally achieve their dream. This show has given me a shed of inspiration, reminding me to continue working hard because eventually, I too, can achieve my ambitions with the efforts I put in. It also represents the difficulties that our country is currently struggling in right now because the number of COVID cases continues to rise and the vaccine for COVID is still in preparation. However, we continue to persevere trying to find a vaccine to cure this sickness and for our country to finally be at peace once again. To sum up my 2020 experience, I would have to say it was quite a crazy, adventurous, yet boring time. It was crazy because I have never expected I would experience a pandemic in my life time. To think I have read about all sorts of plagues in history class, only to discover I would actually experience it myself and one day, be able to retell my journey through this difficult time to future generations. Despite it being crazy, I thought it was also quite an adventure going through this pandemic. I have taken interests in hobbies that I never thought I would such as baking, painting, and embroidering. I even began taking an interest back into anime, which I never thought I would because I always believed it was silly, only to find out I was completely wrong. These animated shows have helped me become the person I am today and I am really grateful for that. Sure, discovering new hobbies was an adventure, there were some moments during quarantine that were boring. I could not go outside and interact with my friends as much, which made my quarantine experience even more boring. Holidays such as 4th of July, Halloween, Thanksgiving, Christmas, and New Years, was quite tragic. Normally I would go on vacation with my family, but because flights were cancelled and going around increased the risk of catching COVID, my family and I stayed home trying to make the most of the holidays. We followed all of the stay at home regulations for the holidays by wearing masks and standing 6 feet apart from our family members just in case they ever caught it. The holidays did not feel as special anymore since we could not interact with people as close, making it seem like it was a normal weekday. My quarantine workspace is my white wooden desk with light blue draws and a light blue chair to match the draws. On my desk, there is a white lamp, an essential oil diffuser, a candle, and a tiny Buddha statue. Around my desk, there are a couple of photos of my family, anime characters as well as BTS members too. Three things that I would include in my quarantine survival kit would be my phone, food, and water. I would bring my phone because it would be my only source of entertainment since I have the ability to communicate with my friends, watch shows, online shop, and listen to music. I would also definitely bring food and water because I need it for survival and I love to binge watch shows while eating some food. I wanted to upload a photo of the anime paintings I have painted during quarantine, but unfortunately I can only upload one photo :(. Instead I will describe it :). My first painting that I have painted was a picture of one of my favorite characters named Killua and he is from the show Hunter x Hunter. I painted a close up photo of him smiling and made my background a little blue color. As for my second painting, I painted Hinata and Kageyama from Haikyu because they are known as the best duos when it comes to their play tactics. I painted Hinata and Kageyama who are both smiling from joy because they were able to get a good shot from one of their plays and I painted the background yellow to symbolize the happiness in the painting. -

Banana Muffins
When the pandemic began, the company I work for sent us all to work from home. While I did some baking and cooking before, I took it upon myself to grow and learn more. Plus, in the office we usually had some sort of food available, and now I had to provide that for myself. I began looking up recipes to make at home that were fast and easy, yet really good. I stumbled on this recipe and now it is my go to recipe. The smell from them baking and after they come out of the oven is great, and they don't take too much time. The smell lingers in the house the rest of the day as well, and the I love the flavor of these muffins. -

Is Covid baking still a thing?
Canadians jumped on the baking bandwagon in the spring with both new bakers and expert cooks experimenting more in their kitchens. The photo caption states how baking was viewed as one of the most popular hobbies early on in lockdown and later became a mainstay in homes throughout the summer, although it became less popular as the summer progressed. This Instagram influencer's husband asks her if the COVID-19 baking trend is still popular as of August, 2020. The photo depicts a coffee cake loaf. -

Perhaps more than this though, I felt that whatever I was baking was something that I had complete control over, so long as I followed the recipe, and in 'these unprecedented times' as the tag-line goes, this little bit of certainty was precious. -

Celiac Disease and Quarantine
In April of 2020 I was diagnosed with Celiac Disease and had to immediately stop eating anything that contained gluten, so no wheat, barley or rye. Gluten is in EVERYTHING. Bread of course, but sauces, candy, condiments, cheese dips, frozen foods, you name it. It is even in beauty products and lotions. Learning to live with CD meant learning how to change the recipes to some of my favorite dishes. I started with a Gluten-Free loaf of bread, which ended up being a disaster. Unlike a regular loaf, GF flour is not sticky or elastic, but acts more like a batter. The “dough” was ultra soft and wet, and especially hard to form. I followed the instructions, but the bread came out hard on the outside and dense and wet on the inside, like an old 50s cake recipe. Quarantine and baking hasn’t been the greatest combo. -

Summer baking
Over summer i quickly realized that there was not much i needed to or could do during the midst of a quarantine. So i used it as an opportunity to just have more alone time. I would wake up sometime at night, go downstairs and bake something or even just listen to music if i was feeling lazy. Then I slept through the rest of the day. It was extremely fun to just reverse my sleep schedule without much consequence. It was also fun to fail a bit at cooking without anyone being awake to judge me. Sometimes, i wore halloween makeup out of boredom, and again, no one to judge. I still miss having so much time to myself to just recharge and be silly. -

Free Time
Since I had a lot of free time with the lockdown, I cooked more and made lots of food and desserts. I made pies, cakes, and cookies. This is important to me because during the pandemic it is something that I did will my time and enjoyed. -

Making My First Sourdough Starter
I decided to start making a sourdough starter a couple months into quarantine like just about everyone else. I had a fairly large stockpile of flour in my cupboards because I bake fairly often, so I didn't have to worry about dwindling supply at the supermarket too much. My grandma taught me how to bake from a pretty young age, and my mom made bread with an electric bread maker for years, but I'd never attempted my own loaf without a bread maker, let alone a sourdough starter. A starter always seemed like something out of reach and far too difficult for an inexperienced bread maker, but with armed with encouragement and tips from some friends via Discord, I set out to make my own. These are photos of my process, from my beginning mixture of flour and water to my first sourdough loaf (and my starter's permanent 'home'). I'm fairly proud of it. It took me about 2 weeks to get the starter to really start; I'm guessing in part because I only had all-purpose flour and not the suggested rye flour. There was a lot of troubleshooting involved before it really started to mature. It's been an interesting process, and I'm really glad I tried it. Starters are far more resilient than I had previous believed, and the bread is fantastic. It's been a somewhat calming respite from everything, even though I feel fairly selfish giving myself that with everything that's happening. -

Coronavirus Cake
We consider our nanny to be part of our family and she was part of our quaran-team. Her April 22 birthday posed a particular challenge for a cake. We would normally visit Ambrosia Bakery, but with more time, we decided to bake it instead. With extra raspberries on hand and some Valentine’s candy about to go out the window, we threw together the SARS-CoV-2 cake to celebrate the unusual times of celebrating in quarantine. -

Quarantine's Progression
This tweet encapsulates the mindsets of many people from the beginning of quarantine in March to the present day. I would describe the first stage as optimism/depression as the full reality of being stuck inside set it. Then came the phase of trying to learn productive skills or keeping busy; for many that meant taking up baking or cooking. Old history books are full of random pictures and quotations of what life was like in whatever the period in question was. It seems as though the average life of a normal person during the pandemic has consisted of: avoiding coronavirus, baking bread, and most recently revolting against systemic oppression. Seems as though the cycle is repeating itself. -

I found this recipe on a Facebook group for people sharing their quarantine recipes. I thought this recipe was important to share because not only did so many people become really interested in baking bread during quarantine, but these recipes call for the sort of bare-bones ingredients that many might have attended to during some of the flour shortages. -

"Everyone Is Cooking Right Now. Except Me."
There are plenty of people who are exploring their culinary prowess for the first time, or maybe it's a life long obsession; either way, people are showing their skills. I'm a baker, I love serving food to others and making food that will be apart of other peoples memories. Flavors are like paints to me, with the right combination you can create a masterpiece. While I'm all for seeing people cooking and baking up a storm while in quarantine, I'm more like Josh Duboff right now. I can cook and I can bake, but am I? Not unless I'm being paid to do so. While people may feel this is the perfect time to work on self-improvement, me included, that work will not look the same for every person. Some people may be working hard just getting out of bed or going to bed in the first place. Food can be a stress release for many, but for others, its a stressor. For Duboff, it's not worth the stress to cook. For me, it's my job, not my hobby. The most I've cooked (unpaid) while in quarantine is irish-oatmeal and the occasional egg sandwich because it's easy, and I can do it while sitting. Yes, the classically trained CIA graduate is not cooking or baking while in quarantine. If it doesn't come from a box or a bag, it's not happening. This is other people's time to shine in the food world; someone else can take my seat while I go get more coffee. -

Yeast Shortage due to Covid-19
With lots of time on our hands, people are turning to hobbies they have been putting off like baking. One of the hallmarks of being a good baker is making bread. This has created a shortage of yeast, which as the article points out, is a living ingredient that can only be rushed so much. Baking has it's seasons, and as a professional baker, you learn when to expect shortages of ingredients, and when orders for products will increase. Typically this is around the fall and into the Christmas season. With the coronavirus pandemic and many bakeries closed, people are baking like it is the Christmas season when most ingredient manufacturers have cut down their output to reflect the coming summer. The shortage of yeast is most likely why many people are turning to sourdough starters. However, the quickest way to get a starter started is by using dry yeast.
