My friend Maddie sent me this selfie of her getting some churros during quarantine. We used to always go get churro's together but many places have been closed. She found a food truck that sells churro's and she decided to go get it as it requires minimal contact with people and allows for social distancing! Like me, she uses food (specifically sweets) to help with stress and anxiety! She described the change during COVID, "Before COVID one of my coping mechanisms for when I’m stressed was to go get something sweet to eat. But I had to adjust that, and now I get something sweet to-go and sit in my car while I listen to music." -

Jewish Melbourne: Sholem Aleichem Grade 6s ‘Gast Oyf Shabes’ - with Bronia Koperszmidt making the traditional Sholem Aleichem College honey cake recipe in Yiddish
"Last Friday, the Grade 6s welcomed Bronia Koperszmidt as their latest ‘Gast Oyf Shabes’. Bronia, who is a former Sholem Aleichem College parent and current SACCEC student, taught the children how to make the traditional Sholem Aleichem College honey cake recipe in Yiddish. This recipe, which Bronia has been using since her children attending the school, is the recipe of Mira Zylberman (the former directress of the Sholem Aleichem Preschool and bobe of Lererin Reyzl Zylberman and Lererin Dvora Zylberman). The students were also taken on a photographic trip down memory lane to see how Bronia’s family connections to the College related back to the students themselves and their own journeys. We hope this will instill in them the understanding that our Sholem Aleichem College families remain a part of our community well-after leaving our college." -

Jewish Melbourne: Sholem Aleichem ‘Gast Oyf Shabes’ - cooking from Fania Lewando's cookbook
"Last Friday, the Grade 6s welcomed vegan chef Michal Dawid Lachur all the way from Warsaw, Poland as their latest ‘Gast Oyf Shabes’. Michal taught the Grade 6s about vegetarian chef, Fania Lewando (1887-1941). Lewando ran a vegetarian restaurant in pre-WWII Vilna. The restaurant attracted figures such as Marc Chagall and Itzik Manger. She also had a cookery school, where she taught about vegetarian nutrition. Fania Lewando published the Vilna Vegetarian Cookbook (Vegetarish-Dietisher Kokhbukh) in 1938 in Yiddish. Many years later, it was translated into English and is available online. Michal led our students in a cooking workshop, where they learned to make a rice kugl and a prune tsimes. The students had a great time cooking with Michal and enjoyed learning to make Lewando’s take on these traditional dishes. A sheynem dank to Michal for joining us in the early hours of the morning to work with our students." -

Interview of Andrew Chapman
This is an interview I gave to a fellow classmate about his experiences with COVID-19 and how it has impacted his relationship with food. We both had very similar experiences, with Andrew telling me how COVID-19 and the subsequent quarantine we all had to go through led to him eating dinners more often with his family, and overall being able to spend more time together. I think this goes to show that as difficult as the pandemic has been, and as much as it has kept us apart from our loved ones in some cases, it has also brought other families even closer together. -

Another One Bites the Dust
Insecure work is nothing new but I was too lucky to hop onto welfare when my hospitality job wrapped up for the lockdown. Really feel for my colleagues, international students and others who aren't supported in the same way and have to hustle in exploitative arrangements. No workers compensation, pay well below minimum wage, and increased risk of contracting coronavirus all while keeping the city fed. These folks are holding it down for us without getting much back. Reform is needed. -

A Thriving Glass Factory, Melbourne
The glass factory is in the middle of Spotswood, a suburb close to central Melbourne. The factory produces glass containers for many products including baby food, vegemite, beer, wine, jam, and kombucha. They have been very busy this year, thanks to panic buying. One staff member stated that production had been high since March 2020, just like it was in Christmas 2019, the peak season for glass production. Glass bottles are made around Australia as they are quite difficult to transport, so they cannot be outsourced to overseas manufacturers. This facility has around 100 staff. In these images you can see some staff having a break out the front of the business. They are wearing masks in accordance with Victorian (state) laws. This is a short post from someone that works at a Whataburger in Texas. This story is important because while I believe fast food to not be essential, but rather an expensive convenience, it is important to keep in mind that some customers were not able to get their regular groceries at the stores during the pandemic. There was a panic that ensued amongst not only the nation but the globe as COVID-19 spread. Although fast food would not be something we would view as essential normally, during the pandemic, it may have been vital for some people as their shopping abilities may have been limited. -

Adapting the DiamondBack Café on campus
These are photographs taken of the DiamondBack Cafe at St. Mary's University-San Antonio in the era of COVID19. The DiamondBack Cafe was one of St. Mary's busiest student spaces prior to the onset of the COVID19 pandemic. However, much has changed at the DiamondBack Cafe since March 2020 As a resident student at St. Mary's University I have eaten in the DiamondBack Cafe almost every day, and I can attest to just how different it is to eat a meal there. The seats are now all socially distanced six feet apart, and there are signs sitting on the tables and taped to the tables reminding students to keep their social distance. Along with the changes implemented because of social distancing, getting meals has also changed drastically. Meal protocols have changed because of the pandemic. Students have the option of taking their meals back to their doors in styrofoam to-go boxes, or they may eat in the Cafe at one of the socially distanced tables. Also, students are no longer allowed to handle their food themselves, rather they are served by employees of the Cafe. Also, some food where that had previously been open food has been changed. For example, the sandwich station which used to be made to order, was for the majority of the semester, replaced by premade sandwiches in to-go boxes. Much has changed in the Diamond Cafe, and it feels different to eat there too. There have been a few times when I have been the only student in the Cafe, which is especially weird. However, everything that has been done is necessary to protect the health of students and faculty. -

After a month and a half of paid stay at home time, a Starbucks in Junction City re-opens. Food Creations During Quarantine
Pre-Quarantine, there was the opportunity maybe once a week to cook something extravagant for dinner; it was always a treat coming home from work and having the house already filled with some aroma that made instantly remember just how hungry I was. As quarantine limited both other responsibilities and the opportunity to go out to eat, the chances to experiment became more frequent. My grandmother had previously run a restaurant years ago, so this became my opportunity to sous chef and learn some of the tricks of the trade. The infrequent aromas of 2019 were replaced by the almost daily culinary adventures that we went on, be it cooking, baking, or anything in between. For myself, and so many others, baking definitely become a type of release to combat the mood swings and general boredom that quarantine offered up on a daily basis. For my cooking escapades, I would usually stray towards the foods that offered comfort, either through their taste or through their smell. Not being restricted by a mask indoors made the simple act of inhaling that much more enjoyable. There was something that was comforting about having those smells wafting through the house, almost a sense of nostalgia not so much for pre-quarantine but for childhood maybe? -

A Viral Social Media Video Brings Crowd to Struggling Food Stall
Baba ka Dhaba, a 30-year-old food stall in Malviya Nagar, New Delhi went viral on Instagram showing the sheer power of social media. The link below shows us an 80-year-old man named Kanta Prasad explaining how they barely manage to meet their basic needs during this pandemic. While showing the food he even broke down and cried in front of the food blogger Gaurav Wasan. Delicious and mouth-watering curries such as dal (lentils), Paneer Matar (cottage cheese and peas) and Aloo soya (potato soya curry) can be seen in the video which are only priced from Rs.30-50 (less than a dollar). This touching video reached 9 million views on Instagram in less than a day and even got support from Bollywood celebrities. Zomato, an Indian food delivery app even registered this stall on their app showing their support making #Babakadhaba one of the topmost trends on Indian Twitter right now. -

Loud noises and Quiet Cooking
There are two things that have marked this pandemic for me: sound and smell. He sounds of slammed doors from a very bored, angry, unsure ten-year-old boy and the smell of my late-night cooking. As a 10-year-old, he felt set adrift, when schools closed, and he couldn’t go play with his friends and they couldn’t come here. How do you explain the concept of pandemic to a kid without scaring the crap out of them? Because he was slamming the door to his room almost anytime he was spoken to, the dogs, of course, had something to say about it, because, well, they’re dogs. So, most of the day, there was slamming doors, constant barking, yelling (him), more yelling (me), crying (mostly me) and just really wanting some peace. So, I began to cook. Stock, one of the first things I learned in culinary school. Tomato sauce. Pasta. Cookies. Bread, and no, I didn’t get on the sour dough band wagon. And I would do this late at night. When it was quite and cool. Filling the house with the rich smells of food. Meals that have been frozen, stock that has been frozen or canned, cookie dough stashed away to make cookies later. I could think while I cooked. It was and is, my de-stressor. The picture is of one of my creations – “Ravioli Lasagna” – basically, using fresh ravioli (this is ricotta and spinach) as your lasagna “noodle”, layered with marinara, mozzarella and sweet Italian sausage. -

Growth, Gratitude, and Green Babies
Teddy Roosevelt said, "The more you know about the past, the better prepared you are for the future." As the pandemic and panic seemed to spread wildly across the globe, I found myself turning to my relatives for answers and advice. When specifically in their lifetime did they remember a time of uncertainty? What did they do to maintain a sense of direction, clarity to make decisions, a sense of well being and safety when each day's events are unfathomable? My mother responded with stories of her mother. My grandmother has always been the most resourceful person I know. Growing up in the Great Depression planted seeds of ingenuity and self sufficiency in her, which she continued to cultivate along with priceless experience and knowledge. She recalled people taking responsibility for their situations and security, and doing their best to make the most of what they had, which at the time wasn't much at all. I will never understand the scarcity she faced in that era, but I did experience the eerie alarm that washed over my fiancé and I entering a nearly empty produce section of our local grocery store, then another store, then another store. Almost every store in our small town of Lewes, Delaware had been almost completely panic-bought out of produce, meat, cleaning products, and hygiene products. It was at that time we decided to take a life lesson from Grandma, gain some grit, and get our hands dirty. Early June, we began a basic herb garden to get the hang of being "new parents to green babies" as we expressed it to our friends and family. We soon adopted a couple of tomato plants, bell peppers, red lunchbox sweet peppers, and as of recently, sunflowers. August brought our efforts to fruition when tiny peppers and tomatoes started to develop and today we plucked our first ready to eat hamburger tomato along with a few green bell peppers and scarlet red sweet peppers. Tending our garden has grown more than just invigorating herbs and veggies, but it has cultivated therapeutic peacefulness and tranquility while watering, cleaning, and caring for these little forms of life. We learned first hand the valuable lesson of just how giving and selfless nature is, ex. planting one seed and getting three pieces of fruit in return from that one plant, or planting one bulb which springs forth four blossoms. Giving life and helping maintain that life in something smaller than you grows a beautiful relationship between humanity and nature, a relationship which has become more and more distant. Growing a garden reconnected us to the knowledge, innovation, and self reliance, of our grandparents. It reconnected us to getting outdoors, getting our hands dirty, and getting into a flow state of mental clarity and caring for another living being apart from human kind. It reconnected us to nature, to the valuable lesson Mother Nature can teach us about selflessly giving and sharing, and a reminder of the respect she so deserves and is so lacking in the current state of the environment. I hope our story of our little backyard garden will encourage you to plant seeds of your own, to look to the priceless knowledge and experience of your relatives for advice in facing an uncertain future, and to share your lessons and stories of how COVID-19 impacted your life as well. -

Demster's Bread Packaging Says Thank-You to Frontline Workers
For the first time since coming home to live with my parents for the summer/the pandemic my mom bought the brand of bread and thickness of slice I like (she prefers thin slice Wonderbread.) Demster's is a well known and established Canadian brand. It was only when about 3/4 of the way through the loaf that I noticed the message on the bag for grocery and food chain workers. June 4th and the store is still low on supplies
I was hopeful that the stores would recover quickly from the panic buying taking place in March. But here we are in June and the local Walmart, once restocked only stays that way for a day. For a while my neighbors were trading supplies, toilet paper for sugar, garbage bags for dish-soap. But at this point it is getting frustrating. I always had my favorite brands before all of this started. Now, I am lucky if I can even find a similar product. I left the store on June 4th just happy I was able to find cheese at all. Every recipe I cook tastes a little bit off because I had to replace one or two ingredients. I just don't understand all of this. I heard that farms are dumping milk and killing off their entire farm. Meanwhile we are being told there is going to be a meat and dairy shortage. Hopefully things start to look more normal now that they have re-opened California. We are supposed to be going to stage four soon. -

We Were Remodelling Our Kitchen When Covid-19 Hit
My family was in the middle of remodelling our kitchen when Covid-19 hit the US. Because of restrictions on construction during the first few weeks, the construction was walled off and we had to move our fridge and some appliances into the living room. This is a photograph of the "kitchen" set up that we used for three months while the construction on our house was halted. We've lived through hurricanes, tornadoes, and other natural disasters that have impacted our access to food but none of them have been as difficult as living for three months without a kitchen. -

Pino's Pizza Offers to Feed Community
This is a post made by Pinos Pizza, a pizzaeria in Wakefield, Virginia. Following the shortage in groceries across the country due to Covid-19, Pino's offered to feed anyone locally who was unable to secure groceries. Prior to the pandemic, there wasn't a single restaurant in Wakefield that even offered delivery. Regularly, these local restaurants aren't exactly full of business given how small the Wakefield community is. In some ways, the pandemic has forced Wakefield to somewhat modernize. -

FDA Loosens Labeling Rules
Consumers have seen a shortage of ingredients and food like yeast, beef, or eggs. The same goes for food companies. The article by Food & Wine addresses how the FDA has loosened its regulations on ingredient substitutions due to the coronavirus pandemic. While some of these substitutions may seem inconsequential and even good, like not bleaching bread flour because the bleaching agent is out of stock. Why are we still bleaching bread flour anyways? The issue is how this will affect ingredient substitutions in the future as there is no set end date for these new rules. Wiggle room with ingredients can get dangerous for consumers, and while it may be necessary for the moment, it will have an effect on our food in the future. -
