Relearning to Cook
I have loved to cook for as long as I can remember, but I had a few rough years and stopped cooking. With the onset of stay-at-home orders for the COVID-19 Pandemic, I went from 60-hour work weeks between my two jobs to nothing. My mind and hands were itching to do something, anything. As many of the grocery stores started to have supply shortages and I now had a much more limited budget; I had to get creative. So, I began to cook. I started slowly with fancy coffee drinks and eggs and moved to bread and pasta. Nationally people were baking bread so I thought well I’ve got the time I might as well try. What started as something I had learned to dread suddenly became my day’s highlight. I was cooking again! The dance of moving through my small kitchen. The clank of pots and pans and knives and wooden spoons in metal bowls playing in time to Otis Redding. The joy of tasting a recipe and nailing both the flavors and the serving size (many recipes serve 4-6, I live alone). It was truly a full-body experience. I soon realized that I hadn’t repeated any meals in about two weeks and decided to challenge myself to go as long as possible without repeating a recipe, if a meal required a repeat that portion simply didn’t count in my tally. I ended up making over 225 different recipes. -

2. Description: Among the most commonly observed effects of Covid-19 on patients are deteriorations (temporary or permanent) of taste and smell (Dell’Era et al. 2020, p. 1591). During the Italian Covid-19 outbreak in 2020, Novara University Hospital conducted a cross-sectional study examining the extent of smell-and-taste related disorders among patients confirmed to have contracted the virus. Results from the study suggest that an overwhelming share of patients experience sharp alterations in both senses, the severity of which differs from subject to subject. While extreme symptoms disappeared a fortnight after subjects participated in the study, a portion of respondents reported lingering sensory effects resulting from the virus (Dell’Era et al. 2020, pp. 1591-96). -

Welcome to My Non-Smelly World
I am currently in the midst of a once in a lifetime experience that I never thought would occur. First, allow me to lay the foundation for this submission. I was born with a condition called Isolated Congenital Anosmia. In laymen's terms, I was born without a sense of smell. This is a rare disorder that affects between 1%-5% of the overall population.* I rarely volunteer that I cannot smell as it involves laborious conversations answering questions as to why and how it could have happened, what foods I can taste, or if I am sad or angry that I have this condition. People are well-meaning, but it gets old repeating this conversation multiple times, so I avoid it like the plague. Wait. Too soon? My preference to keep this close to the vest changed with the arrival of COVID-19. Those who have still not regained their smell after recovering from the virus are now temporarily just like me. It is surreal. Not so secretly, I admit I feel a tiny bit of satisfaction that they are experiencing a glimpse of my day to day life. As a result, I am now feeling the odd desire to tell anyone and everyone about my condition. I feel compelled to share advice and comments with this segment of society while wearing a hat bearing the words, "Welcome to my world!" Also, ideas of creating a Zoom course titled "How to Survive the No-Smell Apocalypse!" frequently come to mind. I can include concepts such as enlisting close friends or neighbors whom you force to smell your house before having people over, obsessively take the garbage out since you do not know if it smells, or the joys of surviving a dutch oven with zero consequence. Also, I will share my list of candle scents that anyone would enjoy smelling in your home. Hint: There is only one, vanilla. Trust me. I have tried them all using my family as guinea pigs. Finally, I feel like the art of 'fake smelling' is underrated and must now be remedied for society to interact with some sense of normalcy during this otherwise chaotic time. I will demonstrate the proper and accepted social reactions when smelling various odors such as used diapers, spoiled foods, lotions, perfumes, or (insert all world smells). The creme de la creme is learning how to emote false elation at the announcement of another semi-annual Bath and Bodyworks candle sale or when Starbucks Pumpkin Spice Lattes come around again. The ability to avoid drawing attention to yourself via 'fake smelling' cannot be underestimated. In conclusion, this pandemic has provided a unique opportunity for others to experience life through my nose. It is not something I would ever wish permanently on others, yet knowing that it is a temporary condition, I have found it to be a bit of respite in a dark year full of so many unknowns. Now can someone confirm whether my Jeep honestly smells like stinky teenage feet or if my husband is messing with me again? *Disclaimer: This measurement may not still be accurate but comes from articles and journals I have read over the years. -

Cold in the Classroom
If you have ever been in a middle school classroom, feeling cold is probably not the first thing that you think of. One might think of rowdy kids, perhaps non-inviting smells, stuffy air, but not necessarily the feeling of cold. After going home on March 13, 2020, I was forced to work remotely for the remainder of the 2019-20 school year due to the COVID-19 pandemic. It is still crazy to think how quickly everything changed from normal life to the furthest thing from it—just two days before the end of in-person schooling, I was still planning on going on the eighth grade Washington, DC trip! Anyway, going into the 2020-21 school year, because teachers were allowed to return to their classrooms (even though school would remain in distance for the foreseeable future), I decided that I would go into my classroom and work from there. I figured that it would help create a sense of normalcy in my own life while offering a familiar background to my students. After a few d ays of w orking from school without any students, I noticed how cold it was in my classroom. On a normal school day, I would turn on the air conditioning fairly early in the morning, being that the room would become warm and stuffy shortly after the students arrived. Even with it warm outside, I was noticing myself running the heater well into the afternoon. Without the heater, my classroom would quickly become unbearably cold! With brick walls and only a thin layer of carpet over a concrete floor, it is clear why it was so cold. I was just one person in a room that would normally have around 30—my body heat alone wasn't going to heat up the room! It is amazing to think that a silly little thing like the temperature of my classroom kind of got me down. No matter what I did to try and simulate normal life, it was just impossible for life to be normal, and that nagging cold was there to remind me of that fact. Just writing this down, I can feel the cold on my arms and legs, and I have a n urge to go and get a blanket, put on a sweatshirt, or turn on the heater. Come to think about it, I can also feel the pain in my lower back from sitting in front of a computer all day! In addition to the sense of touch/feeling being noticeably different, I have to say, the absence of, shall we say, interesting smells has also been out of the ordinary for my middle school classroom. I really cannot complain all too much when it comes to my experiences during the COVID-19 pandemic; I am lucky enough to still be employed, I can work at home if I wanted to, and no one all too close to me has had the disease. A great many people around the globe have had their lives shattered in the past year, so I really should be counting my blessings. With that said, I feel as if the coldness of my classroom somewhat symbolizes the isolation that I (and many others) are feeling during this trying time. The simple fact that there are not 30+ individuals in the room is causing the cold and, again, it is a nagging reminder that the world is simply not the same as it was a year ago, no matter how much we wish it were. -

Food Creations During Quarantine
Pre-Quarantine, there was the opportunity maybe once a week to cook something extravagant for dinner; it was always a treat coming home from work and having the house already filled with some aroma that made instantly remember just how hungry I was. As quarantine limited both other responsibilities and the opportunity to go out to eat, the chances to experiment became more frequent. My grandmother had previously run a restaurant years ago, so this became my opportunity to sous chef and learn some of the tricks of the trade. The infrequent aromas of 2019 were replaced by the almost daily culinary adventures that we went on, be it cooking, baking, or anything in between. For myself, and so many others, baking definitely become a type of release to combat the mood swings and general boredom that quarantine offered up on a daily basis. For my cooking escapades, I would usually stray towards the foods that offered comfort, either through their taste or through their smell. Not being restricted by a mask indoors made the simple act of inhaling that much more enjoyable. There was something that was comforting about having those smells wafting through the house, almost a sense of nostalgia not so much for pre-quarantine but for childhood maybe?
