Starbucks Egg Bites @ Home?
While this may be a trivial struggle, the pandemic minutely affected my morning traditions. As someone who wakes up with just enough time to get ready and run through a drive-thru before work, the closure of my go-to Starbucks caused an abrupt halt in my morning routine. I could no longer grab my morning coffee and signature egg bites or great my favorite baristas as I headed off to work. After the swift investment in an Instantpot, I read through numerous recipes in an attempt to get my mornings back to "normal." As I located a sous vide egg bite dupe for those made at Starbucks, I quickly began experimenting with numerous combinations of veggies and meats for my sunrise snack. After several attempts and failures, I eventually mastered the egg bite, and now I consider them a staple of my repertoire. While my mornings were still far from "normal" due to the numerous restrictions set because of the pandemic, a little piece of me felt the comfort that stemmed from the creation of these little egg bites and my coffee in the morning. This experience that spawned out of the events caused by the pandemic forced me to become a better cook and an ingredient-conscious one at that! I've found the kitchen to be a place of comfort and artistic expression now that I know how to appreciate my ingredients, tools, and desire to learn more about cooking! -

Empty Shelves
On March 15, 2020 around 3 PM, Nevada’s governor announced that classes would be suspended. I took these photos on the same day, except for the one in the upper right corner, just about 2 days after. In the collage, you can see empty shelves of beans, pasta, paper towels, toilet paper, and even eggs. I never thought a day would come where multiple shelves in grocery stores would be empty. Coronavirus has already existed long before this announcement, but I remember that day because nothing was ever the same after. People were in a state of panic, buying everything in bulk because the person next to them was doing the same thing and God-forbid that they run out of eggs. Arguably so, at that time, I understood that people wanted to stock up on everything in order to properly quarantine themselves. Around April, I took the photo in the upper right which is a handwritten sign that I made for the store that I worked at. It took some time for the government to officially mandate that masks were required so we had to take the initiative of doing so. Now, 7 months later, I’m not sure if things have gotten better or if we just learned how to live around this virus, but at the very least, the shelves aren’t empty anymore. -

COVID on the Border: Part II
A personal account of the pandemic. COVID on the Border: Part II Its been 6 weeks since I arrived in this small little border town. COVID and its accompanying regulations changed everything here since then. The mask rules went into effect two weeks ago, police will ticket on the spot if found in public without a mask. Over the past week I continue to watch the numbers climb, soon the U.S. has surpassed the rest of the world’s nations with COVID illnesses and deaths. Social distancing has just become the buzzword of the year. Everyone knows who Dr. Fauci is. I went to the local Walmart to pick up a few groceries; my hotel room has a fridge and stove. Milk, gone. Bottled water, gone. Eggs, gone. Soap, hand sanitizer, forget about it. There’s a hushed panic on the faces of many of the shoppers. I make do with the basics and head back to my hotel room. Is the zombie apocalypse coming? Working in a new places forces me to meet new people. After introducing myself there’s an awkward feeling when we both realize that shaking hands is now taboo. Will shaking hands ever return? Should we adopt the Eastern bow? We now question the traditions that have shaped our lives. Who are we deep down? We’re naked and vulnerable without tradition. Breakfast at the hotel is now a thing of the past. Can’t serve it, too many COVID concerns. Sure. And how much is the hotel saving now. We make do. The hotel receptionist now serves our coffee. She’s nice. I use it as a way to practice my Spanish again. I enjoy it, I think she’d rather me speak English. Life in the hotel consists of channel changes back and forth from CNN to FOX. I have to ensure my understanding is balanced, I guess each network cancels each other out. Although life here is at a standstill, I am impressed with the way the farms and agriculture moves forward. I still witness workers arriving at the fields in the afternoon to escape the heat of the day. They work hard, picking carrots, broccoli, spinach and lettuce. Life doesn’t stop for many. They’ll be getting no stimulus checks, yet they continue forward, doing the only thing they know to do: work to put food on a table for a family somewhere. I’m impressed. This small little border town has some grit. It’s growing on me. -

Easter Egg Hunt Indoors
My kids, being unable to attend the yearly Easter festivities and egg hunt at their church, hunt for eggs hidden as a scavenger hunt throughout their house. Their church's children's minister, wearing gloves and a mask, left a bag of stuffed eggs, toys for Easter baskets, Peeps and other things for families to use on the doorsteps of each of the families that were part of the church to make it easier for families to be able to celebrate the holiday with their kids at home. *Personal video
