Quarantine Brand Reviews: Trader Joes
I moved into a place that is walking distance to the famous Trader Joe's. While I don't necessarily buy into the hype and cult-like fanbase around it (there is an entire subreddit dedicated to just posting about things people hauled from Trader Joe's!), I definitely understand the appeal. Even with COVID, the employees are still chipper and friendly as they say. My Trader Joe's is located right next to my university, and I imagine it gets a lot of foot traffic every day. Every time I go, while not necessarily always packed, the store always has people milling around. Perhaps the small store size and narrow aisles make it seem busier than it already is. Despite this, the store is reasonably socially distanced, and everyone wears a mask. There are employees stationed at almost every part of the store, including the entrance, so safety precautions are well maintained. With its vast assortment of unique products, Trader Joe's will still be overwhelming to me, but I look forward to exploring more of the private-label brand. -

Learning a passion
During covid, like most people life was isolating for a reasonable amount of time. The people one did stay around managed to get on our nerves anyway. I am however luckier that most because we’re some 11 months in now and I have my health as does my family, and I have discovered a new passion. Since many restaurants were fully closed the only way to eat the food I was craving was to cook it. In this simple activity I found a passion that very quickly turned into something relevant to me as I found a job at a restaurant cooking, and getting paid for that passion. -

Almost a Year of Virtual Girl Scout Meetings
When our Girl Scout troop transitioned online in the spring, we never foresaw the entire year being online. When my best friend/co-leader and I made the calendar in the summer, we originally made it through the end of 2020, thinking that by January we’d be back in person. I guess that shows how short sighted humans can be, a virus doesn’t run on a calendar, so it was silly to think things would be dramatically different without widespread access to a vaccine. So here we are in 2021, pushing through every other week. It has been really great to maintain the normalcy of meeting together, though. All the girls are either going to school on a hybrid (half the week in person, half at home) schedule or a full distance learning schedule, so it’s just nice to have the regular interaction with each other just like they did before quarantine. This also was a perfect opportunity to give the girls increased ownership of the troop. Now that they’re in fourth grade, we have made leadership roles, so the girls are responsible for different parts of the meeting. This takes the pressure off me for having to fill two hours on Zoom in a way that is fun and meaningful and doesn’t feel like school! I absolutely love seeing their creativity in making up games, activities, snacks, and issues/problems in our community they want to help fix. There also are some girls who used to be passive who have really loved this platform and have really stepped into being leaders. I am, however, running low on badges they want to earn that are easy to do over Zoom. The one shared here ended up pretty fun. To earn the “Simple Meals” badge, the girls worked in virtual groups to make different breakfast, lunch, and dinner meals. Then they basically did their own cooking show by walking the other girls through making whatever the dish was. Bonus - everyone was nice and full by the end! I miss my girls terribly, but we are so fortunate to be able to have the girls continue to meet, share, and support each other while we patiently wait for the cases to decrease. -

Apart for Eleven Months
This year, my daughter’s Girl Scout troop, like every other troop in the country, has moved their cookie sales online. Even cookie pick up is strange this year. Instead of having families come by and pick up cookies to sell, I leave the cookies on the porch with the receipt and wave through the window. When my best friend (and co-leader) came with her daughter to pick up cookies, we chatted through the window and took a picture to save the bizarre moment. I mentioned that when another family from the troop came to get cookies, I almost didn’t recognize the girl because she had gotten so tall. My best friend then had the genius idea to take a picture of her daughter by my front door. She said I should take a picture of my daughter so we could compare their heights, as they have been the same size their entire lives. And then she said a statement that shocked me: “I mean, it’ll be a year next month since they’ve actually stood next to each other.” I guess since my best friend and I text almost every day, and have seen each other over Zoom, I hadn’t processed how truly long it has been since we’ve all been physically together. I met my best friend when I was 11, we were college roommates, married guys we were all in the same friend group with in college, had our first kids exactly six months apart from each other, our second kids two months apart from each other, and live 15 minutes away from each other. We have been lock step since we were kids, so not seeing each other for almost a year is insane. As the picture shows, our daughters are still basically the same height, so even apart, we're still lock step. Still, hoping we’ll be able to be together again before the girls grow anymore! -

Pandemic Brand Reviews: Starbucks
During the pandemic, I have noticed that my local Starbucks drive-thru lines are still long, maybe even longer than before. Even during odd hours, like 5-6pm, when people are usually eating dinner. This has been happening even before companies stopped doing work from home. I wonder if some of the people in the lines are bored teenagers like me who just want something to do, and maybe a little social interaction. It could also have to do with TikTok, where people share their favorite Starbucks orders. It seems like every week there is a new Starbucks trend that people have to try. It is interesting to see how the pandemic has affected consumer behavior. -

Covid-19 and its Impact on my Routine
When the Covid-19 Pandemic hit, it was very hard for myself and many other. Having to stay quarantined and not being able to see my friends and even family members was hard. On April 19th, 2020, it was my birthday and my parents knew all i wanted was to see my friends. They planned a drive by and one of my closest friends stayed the night at my house. 4 days I had learned that my friend tested positive for Covid-19, which ultimately led to myself getting the virus. This totally through my body out of balance. I sat around all day, barely ate, and constantly felt tired, but I knew I needed to do something about this. My older brother, who was at our house during quarantine, was an athletic trainer. He began to train me, even while I still had the virus. He set me up with workouts and I began to train in the basement of our house where we had dumbbells, bands, and a pullup/dip bar. I began working out 6 days a week and really noticed a change in my diet and mental state. It got me into a routine of getting good sleep, eating a full breakfast, lunch, and dinner, and kept me active and in better health. I went from being constantly tired, lazy, and not eating enough nor getting any sleep to always wanting to work hard, stay happy, and physically and mentally healthy. Although the pandemic has had many downsides, i learned to stay active in working out and staying in the best shape i possibly can be in. -

Supporting Healthcare Workers with Meals & Food Services
Everyone can surely agree that healthcare workers are our everyday heroes. Healthcare workers are the ones who had voluntarily trained and continue to medically assist those who need it without discrimination. All this while risking their own safety and well-being during a deadly pandemic. They are no strangers to long work hours while also having to always stay alert and ready, because quality care can greatly influence someone’s life. Due to most of their time taking care of patients, one can easily see how it can drain their own health as well. Hospitals are not exactly known for their top tier food options either. For these reasons, organizations like Meals for Heroes had worked with food services to help these essential workers with their meals. With the COVID-19 pandemic closing many businesses as well due to safety regulations, we have also been seeing the same businesses (as well as bigger ones) pitch in with meals and more affordable meal plans. Covid Baking Trial and Error
One of the things that I have recently attempted during the end of the Covid 2020 year and into 2021 is to learn how to bake using healthier fats and alternatives. I love cookies and other baked goods, but I could certainly use less butter and unhealthy fats in my life. Instead, I have spent the past few months of the Covid plague year trying to learn how to substitute things like avocado and applesauce for butter. Sometimes this works really well, other times it comes out horribly. I am trying to use this crazy Covid year to become better in the kitchen with healthier and delicious cooking/baking, but it can certainly be a frustrating process. At least it is fun and a productive use of my time in a time when nothing is open. -

Kitchen Organization during Covid
During Covid, I started to cook a lot of different foods that I had never before. I was always cooking simple things with chicken and potatoes mostly, sometimes pasta and other easy dishes. During Covid, I started to experiment with new styles of cooking and cuisines. I quickly found that my small kitchen was filling up with items and ingredients which was causing chaos and disorganization. I bought a bunch of bins to get things organized. For all of the terrible things going on during the Covid year of 2020, I tried to take advantage of the time by upping my kitchen game as best as possible. -

Tea Time Together
I am very close with my mom, and used to regularly visit my grandmother, but I moved across the country right before Covid-19 and was unable to visit this year. I was feeling extremely homesick during the fall, as my grandmother and I have birthdays near each other and usually celebrate together but we were unable to do so this year. While my grandmother and I did send letters and cards to each other and I facetime with my mom fairly often, I was still experiencing a feeling of loss and a lack of connection. To bring us together, my mom proposed that the three of us all use the same tea advent calendar to celebrate the holidays. We all got the same mug, the same tea set, and spent the month of December enjoying tea from three different places, which allowed us to feel a sense of togetherness, even when we are apart. -

Covid Rice and Beans Stock Use
When Covid hit in late February/early March, wide-spread food shortage rumors started to circulate everywhere. The news, social media, friends and family, and seemingly everyone continuously talked about the likely shortages that were going to start to take place. For a good week or two in March, it almost felt possible that our networks for food supply could be shut down, which resulted in everyone stocking up on certain items. One of the few things that I picked up was a big bag of brown rice and a pack of 15 cans of black beans. I hid those away in case the worst would happen. Now, nearly a year later, I am using those supplies and reflecting on the unprecedented panic that was going on at the time that I purchased these items. -

Brussel Sprout Failure
I have been growing Brussel Sprouts for a few years now. I love growing, eating, and cooking with them! I was looking forward to my harvest of Brussel Sprouts during the 2020 season, especially with the Covid lockdowns and all of the stress involved. It was terrible to see that pests ruined all of my Brussel Sprouts plants so I had none. It was the biggest failure of my garden this year and was made all the more disappointing with the Covid situation going on. Here's to the 2021 season and hoping that I can harvest delicious sprouts! -

Instant Pot cooking
I bought an Instant Pot a year or two ago when it was the new and big thing in cooking. When I got it, I like many felt quite overwhelmed by the device. Therefor, I really only used it every once in a while to cook rice. Otherwise it stayed packed away in my kitchen. Then the Covid lockdowns started in March, which resulted in more time at home and a desire to do other types of cooking. I started to watch Youtube videos on the various functions and countless recepies. During the lockdowns, I have used my Instant Pot to make everything from soups/stocks/stews to tacos and all sorts of different types of dishes. I would say that I used the Instant Pot more than (or as much as) any other tool in my kitchen during the lockdown. -

Hungry in a Pandemic - Food Banks
The numbers of people with food insecurities in 2020 include some scary statistics. The BBC wrote that one in eight Americans didn’t have enough food in the month of November, 2020. Feeding America said one in every six Americans would face food insecurity. Some people are getting creative, like a food bank in Illinois that started out online, providing a sort of online grocery shopping, but for free. Hunger has been a world-wide problem for a long time, and is something I would like to see ended in my life time. However, during this pandemic, when many more people began facing economic hardships, we see different outcomes. Some people are trying to make changes and help more vulnerable people, like some of the stories you can find on foodbanknews.org. Unfortunately, there are still many people facing the fact that they do not know when their next meal will come from. It isn’t a food problem, it is a society problem. -

Pandemic Brand Reviews: Sprouts Farmer's Market Grocery
There is a Sprout's less than 2 miles away from my house. My parents would often go to buy fresh produce and snacks from the bulk section. Due to the pandemic, Sprout's no longer offers their self serve bulk section. Instead, there are prefilled bags. My parents no longer frequent Sprout's, I think because of this new policy, or perhaps better prices elsewhere. Because my close friend works at Sprout's, I visit her at work. With the exception of the bulk section, everything is still the same. However, I do see the curbside pickup and grocery delivery options being used more. My local Sprouts has designated some parking spots for curbside pickup. One time when I was visiting my friend, she was on Instacart (grocery delivery) shopping duty that day. I walked around with her around the store as she picked up the items that the customer requested. She had to be very quick and find the items immediately. Not only that, but if the phone beeped, she had to drop everything she was doing to deliver a curbside order. Being an essential worker in customer service is very hard work. I hope that people can acknowledge and appreciate their hustle. -

This organization is based in New York City, New York and pairs volunteers with people that need help getting groceries because they are unable to pick them up or cannot afford them as a result of the pandemic. There are featured artists associated with the organization that have contributed their talents to aid in spreading the message of the organization to those in need of this service, as well as volunteers, via posters, social media, and the website. This website highlights a unique combination of art, volunteering, community, and food access during the pandemic. -

Community Connections: addressing food scarcity in Sacramento, California
This website is a rallying point for Community Connections 95820, a community organization that works to provide food to families in need in the South Oak Park neighborhood of Sacramento, California. This organization is picking up where food banks are leaving off as many of the food banks in this neighborhood have closed due to the pandemic, and families have been lacking food for a variety of reasons. This highlights food scarcity issues during the pandemic and efforts of community members to make sure their neighbors are still able to get food. The “About Us” page says Community Connections was inspired by a project called Invisible Hands, in New York City. Community Connections highlights their commitment to safety, dignity, and anonymity for the families, sponsors, and volunteers. -

It's a pandemic, let there be cake
I was at the supermarket this morning and bought a King Cake on impulse. It was pretty pricey for a supermarket cake ($17). But, it only took me 3 seconds to justify it, my 6 yo has been out of school for a year (she’s learning online, but it’s not the same). The 2 yo is also home and they both get stir crazy. I have really found memories of eating King Cake every year at my best friend’s house, they lived in Louisiana and brought the tradition with them to Michigan. The fun, in addition to cinnamon, bread, and icing, is that there’s a small plastic baby inside the cake that someone will find in their piece. I hid the baby in the cake this morning and told the kids they could have a piece after eating breakfast. The tradition is that finding the baby is good luck, and depending on where you are, you might have to make the next cake. -

Distracting Myself with Latte Art
At the moment, the only reasons I leave the house is to shop for essentials and for work. As a barista, my job can get fairly uncomfortable, as there is often a struggle between me and the customer, as they immediately want to remove their mask and take a sip of their drink instead of waiting until they are at a table or outside, or they don't want to wear one at all and refuse to comply when we ask. We also have pushback against limiting indoor seating and maximum capacity of the store, as we do have a small shop that makes it difficult to distance. It has led to tense interactions and anxiety leading up to shifts, and I have been struggling to find reasons to enjoy work. Because of this struggle, I turned towards improving my latte art as a way to both improve my craft and distract myself from the complications and uncomfortable interactions that have disrupted my workplace. It has brought me a sense of productivity and calm, despite the issues pervading the shop. This is my progress so far. -

German cafe tells customers to wear pool noodles to enforce social distancing
I love that this German café found a way to inject some humor into social distancing. It is absolutely hysterical and provides much needed levity during this stressful time for so many. Of course, my brain immediately went to wondering if the café re-uses those hats. Although customers may not catch COVID-19, they could catch lice. Eeeek! -

Pesach mutual aid, care packages for solitary seders!
When we went into lockdown in Naarm (Melbourne), many Jewish people realised this meant doing their seders solo or over zoom. Restrictions on number of guests meant that a seder with the family wasn't possible. Whilst at most seders you would usually have multiple people who had divided the seder night responsibilities (someone on charoset, matzah ball soup, gefilte fish, kosher wine, boiled eggs and each item for the seder plate), this night was different from all other nights. Our seders suddenly felt bare with the looming responsibility to create an entire seder's worth of food, for one. For those of us who lived away from our families and the bagel belt, there were additional challenges. For the queer jews who left their south-eastern homes for the cramped share houses of the inner north, finding Kosher and seder specific ingredients was near impossible at our local Piedemontes. I called my closest Woolworths and asked if they had ingredients for passover, "You could try the international food aisle?" they suggested, I knew that wouldn't suffice. I was grieving the loss of my most important cultural holiday of the year and the foods that came with it, when I decided I would drive to Southside, and collect ingredients from there. Knowing it would be useless to cook for one (and that I still haven't learnt the skills to do so) I decided to buy enough that I could make up care packages for other Jewish people doing their seders alone. The buba of the northside, giving just enough of everything for a table of one. 3 matzah balls, a jar of broth, enough matzah to break, hide and dip in charoset, etc. Other Jewish people contributed ingredients or made gefilte fish to distribute too. I managed to distribute over 25 packages to people joining their seders via zoom. For me, it was such an important way for me to feel connected to community despite distance, and honour pesach at a challenging time. -

West Contra Costa Unified School District Food Services Meal Distribution During the Pandemic
This is an example of what many schools in California are doing for children and families during stay-at-home orders of the pandemic, as part of efforts of the US Department of Agriculture. Many families face food scarcity issues and the meals provided at school are sometimes the only source of food during the day for students. During the pandemic, many children will face food scarcity issues if they do not attend school in person. This school district has organized meal boxes that provide breakfast, lunch, dinner, and snack. The website provides the pickup information in both English and Spanish to meet the communication needs of the families in their district, and stresses the importance of food for students' health and well-being. -

Food, COVID-19, and my Mother
My mom raised her children around food. She made sure everything revolved around it just like the Earth revolves around the Sun. We ate whether we wanted to or not, as food was her way of showing love. Mom is now in her late 70's and still works miracles in the kitchen. When we visited my parents' house (pre-pandemic), she fed us until we could not eat anymore, then declared we were still hungry and loaded our plates with more. That is what Mexican moms do, she always says. Even though we protest, my husband, kids, and I love it. All of this changed once COVID-19 hit. Worried about my parents catching the virus, we did not see much of them in 2020. When we did, it was from a distance in their backyard and not for very long. It took an enormous toll on my mom. My parents cannot visit with their children and grandchildren, but almost just as worse, my mom has no one to cook for but my dad. Although she still enjoys cooking for him, it is not the same. Although we all know what food means to her, none of us realized just how much until this pandemic hit. Normally, she is rarely sick, loves to hike, and enjoys going to aerobics with her friends. However, lately, she has felt melancholy, is getting headaches, and is sleeping more. This is extremely unusual for her, which has us all very concerned. This pandemic is wearing on her both physically and emotionally. This feisty woman is slowing down, which is scary to us all. Over the past year, we continue to tell her we want to come over but would never forgive ourselves if we unknowingly pass the virus to her or my dad. Mom did not and still does not understand. She just wants what she wants, which is her family surrounding her. My dad is much more pragmatic about this situation, but mom will not have any of it. She is incredibly frustrated and is not afraid to tell us about it. Luckily, both of my parents just got their first dose of the vaccine last week. My dad said this gives them renewed hope that their family will be together again soon. I hear this hope when I speak on the phone with my mom. She is ready to get busy again in the kitchen. I cannot wait to eat her homemade tortillas straight off the stove, her spicy chili, and all of her other tasty dishes. People are now talking about the 'new normal.' I do not want a new normal. I want to get back all that this pandemic has taken from us, including my family crowding around a table full of my mom’s food. -

Grabbing for Groceries
Grocery shopping is part of nearly everyone’s life. We’re used to going into a store at most hours of the day and night and finding what we need. Many of us eat out quite often so don’t stockpile food supplies at home and don’t cook at home very often. So grocery shopping pre-pandemic was a relatively easy and boring task. With the pandemic came restaurant closures and restrictions and people started eating at home more often. People started buying greater quantities of food and other grocery items (particularly toilet paper!), which led to shortages and quotas on the purchase of particular items. The grocery store became somewhat of a combat zone, with people battling each other for items and viewing others as the enemies who either were going to steal their food or give them the virus. The entire grocery shopping experience changed precipitously for most individuals and reflected a major shift in how society acquires and shares its food. -

Home Food Delivery: What a Treat!
One of the most basic survival needs is food, so when the pandemic hit many individuals were struggling to meet this need with the changed food landscape. Restaurants were closing, grocery stores had restricted supplies, going grocery shopping could be dangerous in terms of exposure to the virus and exposure to people fighting over items, and many people weren’t in the habit of cooking at home every day. So this most basic of needs underwent significant shifts due to the pandemic. I dislike shopping, cooking, looking up a recipe, cleaning up the kitchen, and even eating. So I tend to eat out quite a bit. I pivoted during the pandemic to getting home food delivery and that change has been one of the few positive effects of the pandemic. It saves me time, reduces stress, and improves my health because of the healthy food choices. -

Coffee Shops and a Sense of Normalcy During COVID-19
When COVID-19 started affecting Kansas City, little changed at first. We wore masks, used hand sanitizer, etc., but life went on as normal otherwise. As the virus progressed, we closed our offices and I started working from home. One of my pre-COVID rituals was a trip to Broadway Cafe close to my house for a great latte or macchiato. At least this ritual was still intact. Then, the coffee shops all closed. It sounds silly to say this affected me even more than going into the office. It was my normal routine for so many years though...that a trip to the coffee shop served as an anchor for feeling life would go on, regardless of how far the virus progressed. The audio file attached is my espresso machine at home. I now buy coffee beans for the house, grind them, and pour shots of espresso to drink straight or craft into a macchiato or latte. The sound of my machine grinding beans, pressing the grounds into a puck, and then pouring into shot glasses still did not replace the coffee shop, but it did become an anchor to help me adjust when I needed it most. Today, our coffee shops are open for pickup service. Between that and still pouring my own at home, using their beans, life is good. I look forward to a post-COVID world where the local roasters and coffee shops continue to play an important role in my personal sense of normalcy and the social health of our collective neighborhoods. -

First Potato Harvest
I have been a home gardener for a few years now, and love to cook using the things from my garden. When Covid started to hit the US in late February/early March, the resulting panic resulted in widespread shortages in the grocery stores for many common items of American households. News reports consistently told us that food supply networks were in jeapordy. I had never grown potatoes before (though I have grown sweet potatoes), but I decided that for its nutritional value to space ratio, it would be worth growing potatoes this year. Thankfully, the media had seemingly overblown the shortage problem (at least in my area), but that didn't matter because I enjoyed growing potatoes and had a great harvest. My first dish I made with my homegrown potatoes (and homegrown carrots) was a delishous pot roast. I was able to include a glass of y homebrewed beer to complete the meal. Sitting down for this meal was certainly a bright spot during the pandemic and was the culmination of several months of labor and enjoyment. -

Costco Family Pack of Melona
At the beginning of quarantine, my friends would often bike to my house to drop off food. On one hot summer day, I gave my three friends bars of Melona and we ate together on my driveway. During that time, we had virtually no school assignments and had the freedom to do as we pleased. I began drifting from a lot of my friends as the time we used to spend together in class disappeared in an instant. Surprisingly, I made a lot of new friends in this online learning environment. I grew bonds with people I never thought I would talk to before. I strengthened the bonds with friends whom I have already been close with before quarantine. The image of my crooked Melona reminds me of the time when quarantine was just an extended spring break, a break from the stress of school and extracurriculars. -

More Espresso, Less Depresso
The item that I have chosen that connects to the pandemic was a Starbucks Coffee. The reason why I decided to choose this item is that there are days that learning over zoom is quite a challenge and that it gives so much pressure on me to be able to adapt to this kind of style of learning. With coffee on my hand, I can focus on class more and it makes me more energetic. When I drink coffee during my zoom classes, I tend to be able to participate more. I love caffeine, it encourages me to also be a positive person during these times because, without any coffee, I wouldn’t be able to learn anything from a monitor screen. Coffee best represents my current experience as a junior in high school because there are days that are sad and depressing, and there are days that are happy and bright. Online learning is a cycle, wake up and learn, after that you rest. I have been doing this since MARCH. Again, this is me with coffee because without any coffee, I am really tired and not energetic. When I have my coffee, I am always feeling refreshed and active! Online learning is something that I am not used to and I fear how with the difficulty of learning online, I am not able to understand the lesson which can lead me to bad grades. Hopefully, I will be able to accomplish my goals by staying determined and dedicated to online learning, resulting in a better grade for my classes, (with coffee of course). One word to describe my 2020 year is a challenge. It’s a challenge because there are things I have been through, like losing my grandpa who sadly passed away due to a heart attack and not being able to visit him because of COVID. COVID was mainly the reason why my 2020 was a challenge because I have to figure out new ways to keep myself happy and motivating. Online classes have made me less motivated because it didn’t feel the same and that everything was quite last minute last year. I wasn’t able to keep up with lessons, which discouraged me to continue and of course my grandpa’s sudden death. As from my experiences, the various holidays looked the same for me this year. Christmas and Thanksgiving were the same because I usually hang out with my family. When I do my online classes, I usually have a workspace. Since I know for a fact I am going to sit in one place for the next 9 hours, I have my coffee next to me to keep me up, I have my water, some chapstick, a big monitor screen, my textbooks, and my journals. I also have an office chair with a pad seat cushion for me to be comfortable! Even though those were the basic items on my quarantine workspace, I like to keep things simplistic. I only have things that are essential for me to use for working online, so I am not bothered by that. The three things that I would include in my quarantine survival kit would be some energy drinks, chapstick, and a pen with a journal. The reason why I chose these items is that for the first two, I cannot do anything without them! It’s great to have a lot of energy to do tasks, and some chapstick to have my lips not chapped. I also wanted to bring a pen and journal to describe my experiences in quarantine. I would also use that journal to write down things that bother me and things that I am appreciative of. Words do mean a lot, so I love to express my feelings in a journal to remind me that overall in time, things can get better. -

The Happy Little Chef
The media focuses a lot on the losses children are facing during the pandemic. And while I certainly would prefer that the virus was contained and my son would be able to attend school in person, take piano lessons with his piano teacher beside him instead of on a Facetime call, and play with a friend outside of his older sister, my six year old son is genuinely enjoying quarantine. I realize this is a privilege - we have a backyard, space, two working adults who can afford food and technology, and a live-in grandma who can help with any distance learning issues. But my son seems to be thriving in this much simpler and quieter life. We always did a lot together as a family, but we did not spend a lot of time actually at home. Now that we’ve been home together for over ten months, we have settled into this new life that involves my son helping my husband make dinner every night. And he LOVES it. It’s not as though he had never cooked before, but to be able to do it every night, side by side with his dad is an experience he did not have in our pre-quarantine life that was much faster paced and on the go. Many nights, the little chef will bring me a menu that outlines the dinner and asks for my order. He takes such pride in telling all of us what parts of the meal he was in charge of. He assures us he is both the owner and the “cooker” of the restaurant and that his daddy is his employee. When dinner is over, he asks to take my plate, and has recently become very interested in washing all the dinner dishes himself (no complaints here). I certainly long for the day that we can go back out in the world, but I feel very blessed that my son will be able to look back at this year with happiness, even in the midst of such a dire situation. -

Filling the Void with Food...and Failing
Food is the centerpiece of all of our family gatherings, even the informal ones. Before quarantine, my in-laws would drop by regularly, and always with enough food for an army. In the almost twenty years I have known my mother in law, I have never seen her without being given food - even if it’s a fresh bao she pulls out of her purse (true story - this happened at my kids’ student of first trimester awards last year (pre-Covid). I saw her for a total of 20 minutes, just enough time to watch my son and daughter get their awards and dash back to work, and that saint of a woman gave me three warm bao she had picked up on the way from a local bakery. “Pretty good” she said, which is her seal of approval.) It is hard to admit as I type this that I have not physically seen my in-laws beyond waving through the front window when they drop off homemade jook (rice porridge) since March. We Facetime with them and text, but it is not the same. That is a long time to be away from people that have a house less than five miles from ours. My in-laws are over 70 and a huge part of our lives, to lose this year with them hurts in ways I can’t describe. And culturally, food is their “I love you” - they don’t say the words, they show it through sharing food. And we haven’t had a meal together in almost a year. My husband still cooks Chinese dishes. On Monday, we had 蔥 油 餅 (green onion pancake), dumplings, Hong Kong waffle, shrimp with peas and lumpia (yes, I know, that’s really Filipino, but it’s sort of a staple in our family), and it was delicious. But there is this odd shadow that sort of hangs over our meal, knowing how much his parents would have loved to share it with us. And yes, we Facetimed them so the kids could show them how well the waffle turned and my mother-in-law said she couldn’t wait to come over and try it. The feeling is very, very mutual. -

Becoming Boba Experts
One of our family’s favorite treats is boba and in our area, boba shops are as ubiquitous as Starbucks. Even though transmission of COVID through food is seen as a minimal risk, the process of going into a tiny boba shop to order and wait doesn’t seem worth the risk for an item that is not really essential. After years of vowing to never make boba at home (too much stirring), my husband caved in and ordered instant boba online. We were skeptical - would it really taste as good as the boba shops? Would the texture be right? Making it is a little time consuming, but we were surprised that the taste and texture are exactly right, even at home. My husband, who has always liked brewing different loose leaf teas, has gotten much more into perfecting the “perfect tea.” He has had a fun time experimenting with different teas and sweetness levels, and although I miss the different jellies and other flavors that you can get at a boba shop, I have to admit I am impressed at how easily we were able to conquer making something we never would have attempted without COVID. Added bonus - over the past two plus decades, I have grown increasingly uncomfortable with the amount of plastic that is wasted with a boba drink (the plastic cups, lids, and giant plastic straws). Even with straws technically outlawed and the growing popularity of reusable boba straws, loopholes and lack of enforcement allowed most people to still use disposable plastic straws and the plastic cups and lids. When we make boba at home, there is no plastic involved, nothing is thrown away, and we use our reusable straws. An upside of COVID will be that it hopefully helps us to make small changes (like making our own boba and tea) to our lives to lessen our carbon footprints. -

Spredaing Pandemic
It was a late September night, the sky dark as coal. I was eating a delicious dinner of spaghetti al carbonara with my family when my father told us some scary news. The son of my grandfather's friend had fallen ill and died at the hands of COVID. I did not know this friend or his son at all, however, the fact that it could kill a perfectly healthy, young man really struck me hard, ad I'm beginning to see why my mother won't let me go to school. My father and grandfather attended the funeral, and I was left to think about how serious this pandemic really was. -

Stomach Filled, Life Without Thrill
With long school days and extracurriculars occupying my weekends, I spent the little time I had at home doing school work. I never truly felt I was at home enjoying time with myself or with my family because the rush of high school was not stopping anytime soon. Then, a virus wave put all our lives on pause. Some thought of quarantine as a jail cell, but I took it as a breather. Before, I was unable to see my family often or enjoy proper meals and during these past 10 months in quarantine, I have been able to make up for that lost time. I have been filled with delicious, home-cooked meals nearly 3 times a day made my mom, a passionate cook. It made me realize that providing us with whole-hearted meals was my parents' love language. Throughout quarantine, I have been living, eating, and spending time with my family in the comfort of my home. I often feel that I'm taking this precious time for granted because when things go back to normal, I won't be able to escape the rush of life. Even though my days seem static and monotonous right now, I think I will truly miss the this feeling of comfort in the future. -

The Quarantine Life
Tiktok has made a pretty big impact on my life throughout quarantine and my junior year. I got to watch videos and see new trends everyday. Whenever I was feeling down or bored I would resort to tiktok as an escape. I think seeing videos on cooking, music, etc. really helped changed my perspective of life and influenced me into cooking and listening to new music. Although, junior year so far has been difficult and stressful, Tiktok is still my escape from all the piled up school work and to feel like I am connected with the world. -

My neighbors that had COVID 19
At the start of the Coronavirus outbreak, my family and I got a message from our neighbors telling us that they had COVID 19. It was a severe case and all of the adults had it. Eventually, their grandfather passed so we sent them flowers and brought them dinner every week. Later we received a note saying how much they enjoyed the flowers and they sent us their dinner request. It was a tragic turn of events but the light was we got to know our incredible, resilient neighbors better. -

Pancakes for Dinner
My junior year in high school isn't like any other school year because I could describe it as probably the bumpiest roller coaster I've ever been on. This is because I get to watch Gilmore Girls on Netflix during lunch and lay in bed while logging onto zoom for classes. But the downside is I've been simply alone and away from friends or even teachers for that matter, that I'm supposed to see every week day. Facetime calls are never the same as meeting up with someone in real life so that goes for making up time away from actual school, but I've learned to cherish these moments I have. My family is home majority of the time, and I get to hear my dad play his guitar more often or stay up late with my mom watching Sinister 2 or play Call of Duty Cold War with my brothers. Whatever it is, I'm grateful for this break away from the usual, and I have the opportunity to focus on myself for once. Before quarantine, school was draining me out as I had early classes and I really needed a break, so fortunately, I got one. I've finally found time to think about what I truly want to do in life, and what my future plans are for college because I never really got the time for that during school. I've learned a lot about my interests as well and even time for self-care and all the girly pamper routines. Some days I like to treat myself with homemade pancakes, my favorite, and eat them at any time of day just because I can and I can make them whenever I'd like. Staying home has its pros and cons, but as of now, its important to follow strict protocols in order to safely recover and protect others! so don't forget to wear a mask and social distance when you leave the house because we're all in this together!! -

The Silencing of Industry
The sensory experience that overwhelmed me the most as the United States, and the world, came to an abrupt halt when it was realized that we were in a pandemic virus outbreak was an aural experience—it was the overwhelming silence that came with the world stopping. I live in a heavy industrial town on the Pacific coast Of Washington. While I live about fifty miles from the cities and one hundred miles from Seattle the economy of this area is based around heavy industry and there is constant noise that comes with this. There is a port a mile from my house that is said to be the busiest deep-water port on the northwest coast. At this port soybeans, wheat, oil and lumber are shipped out and German cars built in Mexico are brought in, among other commodities. In my neighborhood there are four train tracks. The closest one is about five hundred feet from my house, the next three are another three hundred feet further. Those train tracks bring goods into the port like soybeans and wheat from the farm fields west of the Cascade mountains and fuel and oil for the ships and for the operations at the port. The train tracks also ship out the cars that come in from Mexico to car dealerships throughout the Northwest. Across from the four train tracks there are lumber mills. The lumber mills load up chip trucks (trucks that carry sawdust from the sawmills to paper mills) and the chip trucks roll in and out of town on a constant basis. The log trucks also roll through town on a constant basis and the log truck drivers as well as chip truck drivers live in the area and park their trucks at their houses. All of this leads to a very noisy area for such a small population. This has never bothered me as the only thing that I really miss about living in cities is the noise. This is the reason why the first thing I noticed as the Covid-19 shut down occurred was how much silence there was. No longer were there log trucks and chip trucks rolling through town. No longer was the rumbling and squelch of the train heard in the early morning and the late afternoon throughout the town. No longer were the airhorns and warning sirens heard from the port. It was just pure silence. -

Embracing the Plants
Once the pandemic was in full swing, food became rather scarce out in the county where I live. Frozen meals? Gone. Frozen vegetables? Gone. Meat? Gone. Dairy products? Sparse. What I could find in abundance were fresh fruit and vegetables. Largely because these do not store long term and people were stocking up on everything that they could hoard for the long haul. Could I really sustain my meat-loving family of 4 on fresh fruits and vegetables to help stretch our very thin stock of meats and dairy products? I have included some basic recipes that I used to help get through the pandemic. This massive change in diet left a lasting impact on my experience of the pandemic through my sense of smell, taste, and hearing. Meals no longer smelled like warm cooked meat with roasting potatoes. Meals became light and fresh. My house began smelling more like a garden every time I prepared a meal. I also no longer smelled the warmth of the stove or the smell of a pan heating up, since we chose to eat a lot of the plants and fruits in a more raw style to get the maximum nutritional value. The taste of meals and snacks changed from processed foods to natural snacks like nuts, dates, and dried fruit. I could taste the change from the pandemic. Everyday noises that would occur in my pre-pandemic household were no longer present in my pandemic household. No longer was there the sound of the oven turning on, the microwave running, or oil popping in the pan on the stove top. Instead, the new normal sounds were that of the food processor to make hummus, the sound of the blender making smoothies, and the sharp tap of the knife colliding with the cutting board. The recipes I chose to include are ones that we started with that have changed the way we eat. These were the easiest to sustain with readily available produce in my rural area. -

Pandemic Hacks
At the beginning of the pandemic, it seemed for a bit of time that the infrastructure of the world was on shakey ground. Thankfully, our food supplies and economy did not collapse. However, the experience and extra-time during the pandemic led to me trying to become more self-sufficient in my livelihood. I have had a vegetable garden for years, but I started to grow different things this year than before. The picture above was my sweet potato harvest experiment, which I was pleased with and had a good amount of nutritious sweet potatoes. I had similar results with things like beans and regular potatoes (very nutritious and filling). On top of these things, I also tried to learn how to make products that I used regularly (even if these were more luxury items than necessities). Growing various herbs and spices, I began to make my own salad dressings, marinades, sauces, and pestos. Additionally, as a fan of craft beer, I enjoy drinking new and exciting beers but do not enjoy paying premium prices. During the lock down, I learned how to brew my own delicious beer for less than half of the cost from the store. All of these projects were fun to do, diminished boredom, and are skills which I can use to enrich my life moving forward. -

Banana Muffins
When the pandemic began, the company I work for sent us all to work from home. While I did some baking and cooking before, I took it upon myself to grow and learn more. Plus, in the office we usually had some sort of food available, and now I had to provide that for myself. I began looking up recipes to make at home that were fast and easy, yet really good. I stumbled on this recipe and now it is my go to recipe. The smell from them baking and after they come out of the oven is great, and they don't take too much time. The smell lingers in the house the rest of the day as well, and the I love the flavor of these muffins. -

Clinton Kelly's 3H Lemon Sauce
Upon news of COVID-19 spreading in the United States, my parents and I made the decision that we were going shelter in place at home. While a lot of things remained the same, my parents began watching Clinton Kelly's 3H show that he did over his Instagram story. During one of Kelly's 3H shows my mom watched him make a lemon sauce. Since I am a huge fan of anything lemon, my mom decided to make it for my family one day and I fell in love with it. The sauce can be described as creamy, lemony, and cheese-y with a lemony smell. Since making the recipe for the first time, it has become my new favorite sauce. This story is specific to the pandemic since my mom would not have watched Clinton Kelly's 3H show otherwise.
