Pandemic Dinner of Gluten-Free Orange Chicken is a Sensory Reminder of Evolving Grocery Shopping and the Effect on My Mental Health
Pre-Pandemic, my small family of three went shopping altogether at our local Frys Grocery every Sunday. As the type of person that lives inside their head and has difficulty multi-tasking when distracted, this was usually an overwhelming experience. It involved avoiding people parked sideways in aisles, answering questions from my wife and daughter (somehow usually at the same time), and being interrupted by loud intercoms. To me it was sensorial overload every week of my hearing and vision to the point where I wanted to leave. When the pandemic really started up in April of 2020 my wife and I decided that my daughter should stay home and we would take turns shopping every week individually to decrease the chances of affecting the employees, the other customers, and ourselves. Along with this was my increased effort to come up with meals and recipes on my "turn." The recipe attached, gluten-free orange chicken from https://www.evolvingtable.com, reminds me of this interesting evolution in shopping that still takes place, as it is my turn to shop today. While my wife looks upon the idea of shopping individually as a loss and misses it...I am able to shop without being overwhelmed. Between less customers in the store (due to ordering online and pick up), the store progressing to using handheld radios, and being by myself, I can really focus and no longer am stressed and overwhelmed to the point where I just want to leave. Every time I make this recipe and taste the delicious orange flavor and smell that hot sesame oil that I had never used before the pandemic, it reminds me of how a stressful pandemic has strangely (and selfishly) made one recurring weekday of my life less stressful. -

I think this item is really interesting, and it does fill an archival silence, about musicians and what they did in lockdown- if they stopped producing music, if they were even more eager to, etc. I first heard this song in the lockdown, and it made me feel like I was connected to the band- he was singing about the same things I was experiencing, I realized everyone was going through similar things in quarantine. I had never thought about what musicians and singers were doing, for some reason I thought their lives didn’t change much, but they did. I thought it was really cool Twenty One Pilots saw that people were down, stressed, etc. and wanted to relieve some stress with a song about the pandemic. -

Food Storage Sourdough Bread
The pandemic caught me unprepared in many ways. I did not expect to run out of flour or yeast. I regularly bake rolls, muffins, cookies, and other treats several times a week. Just a day before New York shut down, I was at my local wholesale club stocking up on freezer items and canned goods, but could not find yeast or flour. The flour and yeast shortage was real and lasted for months in New York. Sourdough bread recipes started to circulate and I realized it was time to break out our food storage. As a member of the Church of Jesus Christ of Latter-day Saints, I have approximately a year's worth of dry canned whole wheat in my basement. My husband started the sourdough starter. As a the scientist in our family, I figured he would be up to the challenge of experimenting with a starter. After two weeks of tending his starter, he pulled out the wheat grinder. The grinder loudly screamed through the house as a fine flour sifted through the blades. A warm, homey smell settled in the kitchen. Then, he set about making the bread--a twenty-four hour affair. The tang of the starter smelled promising. The last hour of baking we smelled the rich smell of the bread baking in the hot oven. When he pulled it out, we could hardly wait to taste it. The jagged dark crust had the hallmarks of an artisanal loaf of bread. It smelled so good, earthy and hearty. After it cooled, he sliced the bread, cracking through the rough crust into the perfectly textured inside. The flavor was perfectly tangy, with a gorgeous whole wheat texture. Before the pandemic, my husband worked long hours at his lab and would never have had the time to make a loaf of bread that required so many steps and 24 hours. And before, we never had the need to make a starter or to use our food storage wheat. -

Hyderabad Smog Clears During Lockdown

I have NEVER seen a blue sky in Hyderabad - it’s always a constant haze and it shows the stark contrast and effect we have on the environment. Stay Connected with Friends
During this quarantine, my friends and I felt sadden that we were not able to see each other day to day anymore. We missed the company and speaking to each other face to face again. In order to stay connected to made several Tik Tok's together to pass the time. It was so fun to see the final product and have fun together again. During this pandemic it is really hard to go without company. Even with my family there seems to be something missing and that is my friends. Friends are everything and you must stay in contact no matter what or friendships are going to be difficult to keep up with. -

Life at Home
Ever since the coronavirus epidemic, my life hasn’t quite been the same. Before governors issued the stay-at-home orders, I was working and had recently started attending college. Everything was good for me and my days were spent living a normal teenage life. Now, everything is closed and I can’t go anywhere. Despite this, I have been surprisingly enjoying my time at home. As a kid I would hate staying home and always wanted to go somewhere to do something. To combat boredom I bought myself a ps4 so that I can play video games with my friends. A lot of my time has been going to my ps4 so it was one of my better investments. Besides playing video games, I have been playing guitar and exercising. These are the fun things I do but there are also the things that I have to do such as cleaning the house and schoolwork. Everyday I balance my time by cleaning the house and doing my homework in the morning. After I finish all my tasks, I then allow myself to do whatever I feel like. I usually finish every night with some exercise and a shower before going to sleep. Staying home all the time has led me to do things I didn’t do before. One thing I have done since the stay-at-home orders is starting a routine for my everyday life. It feels good having a routine as I already know what I have to do and when I must have it done. Of course, there have been some days where I’m lazy and don’t get anything done but I’ve been trying to have less of those. Getting to see my family all the time has been one of the pluses of staying home. I’ve been getting closer to my brothers and sister as well as my father. Whenever I’m bored or can’t find something to do, I’ll hang out or do something with my family. When I feel like going outside I’ll go for a walk around the neighborhood or I’ll go on a hike at the mountains near my house. Sometimes, there's seemingly nothing to satisfy my boredom so I’ll just sleep all day only to wake up at 3 a.m, wishing I didn’t mess up my sleeping schedule. Lucky for me, I have some night owl friends so they’re always down to game or chat at an ungodly hour. It feels like forever since I’ve seen my friends. Talking with them while playing games makes me want to see them even more but it’ll be a while until then. Thankfully, none of my friends or family have gotten the coronavirus. My family and I have been taking precautions to minimize the risk of us getting sick. My dad leaves the house only to work and go shopping but the rest of my family has been isolating. I have several friends who still go out and live life like normal but I know that isolating will stop me from getting my family sick. I wish I could accept all the invitations I’ve gotten to hang out but this is what’s best. Staying at home has its advantages and disadvantages but atleast I have a good home with a loving family and plenty of things I can do to occupy myself. I wonder if when I’m older I’ll even remember the stay-at-home order and the coronavirus. Will this all be something that is mentioned or referenced in future media? Whatever the case, I’m just waiting until the day I can go out and hang out with my friends again. -

Notes From an Essential Worker Series #2
The COVID-19 virus disrupts life, particularly our relationships with those we love. But, relationships are flexible and adapt to circumstance. Due to the stress the virus puts on her non-profit organization, my mom must leave earlier for work and cannot see my dad in the morning. So, in addition to leaving notes for my brothers and I, she leaves a few for him. Most of these notes offer him encouragement, as working remotely is a stressful change for most people. Next to her note, she leaves a coffee filter filled with coffee grinds, so he can make his cup of morning joe. Although my mom cannot do these things in person anymore, she still lets my dad know shes there for him. #FordhamUniversity #VART3030 -

This is a photograph of a flyer posted on the side of a Hispanic grocery store at the end of my street in Northside Chicago on my way back from a quick grocery trip. This GoFundMe was created March 20th by members of the Uptown Buena Park Solidarity Network. The Uptown and Buena Park areas are home to older people, people out of homes, migrants of many countries and cultures, and more recently, young working professionals. The UBP Solidarity Network Twitter bio says they are, “an all-volunteer, grassroots group operating in Chicago's Uptown and Buena Park neighborhoods.” They set up Google forms for people in need to request groceries, bill payments or help being sheltered. Although they only exist on social media, they use physical signs because they do not want to leave out the members of the community who are most vulnerable at this time. Their social media provide links to forms where people can request help from older citizen care, grocery runs and helping with bill payments. #DePaulHST391 -
