From lockdown to Europe
Traveling to another country has its difficulties and differences, especially when it happens after a worldwide lockdown. Seeing the way other countries operated in the wake of Covid-19 and the contrast of our own gave me a much larger point of view on how I process and see the entire world. Italy, Greece, Germany, Austria, the Netherlands. These places were just as impacted by Covid-19 just as much as the United States of America, yet they seemed to handle things remarkably different. A year or so before Covid hit, my family and I planned a cross country road trip spanning the brunt of Europe, which then would amalgamate into a 2 week cruise to see even more places. Long story short, it was a dream trip. Yet, Covid hit, and we feared we would not even get the chance to go. Luckily, lockdowns cleared up a few months before our trip, though people across the world were still wary of the virus. Going on the trip meant masks everywhere, which we were prepared for. Everywhere we went, everyone was polite, kind, kept their masks on and their own personal space, as did we. Now, this was not the first time I'd visited some of these places, but seeing them in the wake of a worldwide contagion left me with a new perspective and outlook. -

Protecting Our Family Members
This is a screenshot from season 12, episode 6 of Shark Tank. The screenshot shows Kirby Holmes enthusiastically showing off a picture of a dog wearing his and his cousin's product, K9 Masks. Their pitch to the Sharks goes like this: Kirby Holmes: "we live in a time when people are questioning the quality of the air they breathe, with an increase in smoke from wildfires, dust storms, and oh yeah, the coronavirus!" Evan Daugherty: "And while we've all gotten more comfortable wearing a filter mask to protect ourselves from air pollution and other threats, what about the ones we really love?" Both: "Dogs!" Even though this product's primary use is not for Covid, it still represents the lengths we went to protect our family members during these times. We all most likely participated in one of the following: - Zoom call family holidays and parties - Postponing weddings - Staying inside - Masking up ALL our family members...even the furry ones! -

A complex decision: Deferring International Students
In the Center of International Programs, during Summer 2021, some decisions had to be made in the office. Due to internal changes, some applications could not be processed, and I-20s could not be developed. Between 10 to 20 undergraduates and graduate students had to be deferred to have more time to issue their visas. This impacted students as some had already made arrangements to come and each case had to be taken into consideration and also be taken personally. The Center of International Programs has over 20 students preparing to go to the university by Spring 2022. -

Giving The Family Covid
One day I woke up fine and normal like every other day and I went to work. At round 2 pm that day I started getting headaches and my body was cold. It was really hot that day too while my body was cold. I told me boss I'm not feeling too well and I wanted to go home. I called my friend who works in a pharmacy my symptoms and he said its possible to be covid-19. He went to my house and waited outside with a rapid test and I met him there. We did a test in the car and after 15 minutes it came out positive. I called my dad who was in my house to come outside so I can break the news to him before the rest of my family because they would've freaked out. I told my dad that I'm positive for covid-19 and he went to setup the house for me and seclude me from everyone else. I went upstairs and I saw my family waiting for me and my uncle had his hand out to greet me and I ignored all of them without giving eye contact and went straight to my room. I rarely ever get sick from anything really. Im sitting in my room thinking I really got covid-19 thinking I'm immune and invincible because I'm a healthy 21 year old and I never get sick. Also no one in my family previously got covid I was the first. This pandemic has showed me what I'm not and I'm just like every other person. The good thing is I mentioned it to my boss and asked my friend to test me right away. This is what everyone should be doing, check up on yourself right away. -

Chicken (or Turkey) Curry
The attached text story is a curry recipe that my wife and I 'perfected' while experimenting with new recipes during COVID-19. With the additional time to cook it was fun to try new things in the kitchen. -

Jared Holmberg Oral History, 2021/08/02
When the Pandemic first broke out, I was concerned that I would catch the virus since I was working in an elementary school at the time. I thought of various ways to boost my immune system and I thought making healthy soups sounded like the best idea. I looked through the internet and I found this healthy quinoa soup recipe. I tried it and absolutely loved it. It was savory, hearty, and contained a rich blend of rustic flavors. This dish became one of my favorites throughout 2020 and I still cook it from time to time. For anyone looking for a healthy way to fight the virus, I recommend this recipe.
