Chicken feeding as a lockdown activity 2021
In July 2021, while on one of my afternoon walks, I discovered this local lockdown activity of chicken feeding. A local household was offering people the chance to feed their very friendly and excitable chickens. I am unsure when this activity first started as I do not usually walk the way that would take me past them. However, it was an amusing and relaxing thing to be able to do amidst the chaos of a global pandemic. The chickens were really very cute, despite not the brightest creatures I've ever known. I have visited them with my family regularly ever since that first time and have noted that other people, often local children, have also relished the opportunity to interact with live animals. In a small way, I believe the chickens have brought the neighbourhood a little closer together and given local children the opportunity to interact with animals they would not normally get a chance to. Sadly, due to old age and the presence of urban foxes the number of chickens has decreased and only one of the original trio remains (as of October 2021). However, she has a new friend now and is very keen to establish her authority. The sign and container of dry food has been removed but we often bring them other food- they are particularly fond of sowthistle. -

My Food Supply
Since the pandemic we couldn’t go out to town that much. We made our farm/garden bigger. We got our chickens. There were about 12 of them and we started working on the garden. Everything in our yard at that time was edible. Then when a dog jumped our fence we started to build an enclosure. It took us about a year to get it done, but we still have a few more fences to drill on. For the entire summer of 2020 we had something to eat from the pandemic straight from our garden. Which is something we usually don’t do since we don’t have the time. -

Her pet chickens were a source of emotional support during the pandemic. Then, the predators came.
Though research in this area is often qualitative and findings have at times been disputed, studies suggest that interacting and forming bonds with animals, such as dogs, might have a positive effect on a person’s well-being. During the past year, in particular, many people have reported that pets played an important role in helping them cope with the physical and psychological tolls of pandemic life. Animals provide companionship and can offer unconditional affection, which people don’t always get from other humans, said Lori Kogan, chair of the Human-Animal Interaction Section of the American Psychological Association and a professor at Colorado State University. Owning pets can also help people maintain a schedule and feel a sense of responsibility, Kogan said. Although existing research has largely focused on more traditional pets, she said, “raising chickens can provide an incredible amount of emotional support.” Plus: “Chickens have their own little personalities. They’re very funny. They’re very cute.” For Kelly Rutkowski, 38, of Ashland, Va., her chickens are her “therapy.” “Just going out with them and just caring for them, interacting with them, it makes me happy,” said Rutkowski, founder of the Adopt a Bird Network, a nonprofit organization dedicated to raising awareness of adoptable birds in animal shelters and rescues nationwide. In addition to hens, Rutkowski also keeps a “bachelor flock” of roosters. “I know we’re missing out on being able to go out and do things and stuff, but being with the chickens is just an experience which makes it easier,” she said. “I’d say they’re just as fulfilling as a dog or cat.” -

Food Shortages During a Pandemic
While most people tried new recipes during the pandemic, what I remember most is the food shortages that forced me to constantly change what I was planning to make and how I made it. I began using grocery pickup before the pandemic, and since I am a full-time caregiver to my mother who is high-risk for COVID, we continued to use grocery pickup as much as possible to limit any exposure to the virus. Unfortunately, this meant that I could not get halfway through the store, realize that I could not make what I was planning due to unavailable items, and put stuff back and try to buy something else. Though I do have the store substitute most items when they can, especially during lockdown sometimes they couldn’t provide any substitutions, which would leave me without one or two crucial ingredients and unable to fix anything to eat. To combat this, I started getting enough food for two separate dishes for every meal, so if plan A didn’t work out, hopefully plan B would. I also started planning for meals that could be used with the same ingredients, except for one or two, and then get both options just in case one was out of stock. Beef and noodles and chicken and noodles would be one example of this, where the main recipe and ingredients are mostly the same, the only difference being the frozen chicken with chicken broth versus prepackaged beef tips with beef bouillon. Due to their minimal ingredients and their easiness to make, these two interchangeable recipes to me most represent the pandemic and what I fixed the most of during the lockdown and food shortages. I have attached the recipe for both. -

Covid Gardening Story and Okra Recipe
I chose to focus on my garden and our chickens that we began right before the pandemic hit. I never realized how lucky I was to live in a rural environment until Spring 2020, when living in the country meant having a bit more freedom than in the city. Our garden and chickens provided us with foods that sometimes were out of stock in our small, local store. However, we also faced other things in our community that made the psychological aspects of the pandemic really hard, such as living with those who deny the reality of the disease and mitigation efforts that people like my husband promoted, as an ER physician. I suppose this story is a bit of a love letter to our little property out in the country, despite the differences in values that we have with our town. -

When the Pandemic first broke out, I was concerned that I would catch the virus since I was working in an elementary school at the time. I thought of various ways to boost my immune system and I thought making healthy soups sounded like the best idea. I looked through the internet and I found this healthy quinoa soup recipe. I tried it and absolutely loved it. It was savory, hearty, and contained a rich blend of rustic flavors. This dish became one of my favorites throughout 2020 and I still cook it from time to time. For anyone looking for a healthy way to fight the virus, I recommend this recipe. -

Kitchen Organization during Covid
During Covid, I started to cook a lot of different foods that I had never before. I was always cooking simple things with chicken and potatoes mostly, sometimes pasta and other easy dishes. During Covid, I started to experiment with new styles of cooking and cuisines. I quickly found that my small kitchen was filling up with items and ingredients which was causing chaos and disorganization. I bought a bunch of bins to get things organized. For all of the terrible things going on during the Covid year of 2020, I tried to take advantage of the time by upping my kitchen game as best as possible. -

Pandemic Brand Reviews: I Miss Costco
Costco is my absolute favorite place. It genuinely makes me so happy. Even going during the pandemic makes me happy. However, Costco is definitely not the same as pre-pandemic. Obviously, there are no free samples anymore. This is because it would be a health concern. Although I will miss munch and shopping, I understand that this cannot be expected during a pandemic. As of now, they have the free sample stations up but with just a display of the food. I know that the free sample employees are contracted by Costco. I haven't seen some of the familiar faces recently. This makes me worried, I hope they are still doing okay during the pandemic. I know that Costco cares about their employees, so I hope they found away for the free sample people to still keep their jobs. Another change I've noticed in my local Costco is the food court. The food court is Costco's loss leader, the delicious and extremely affordable food lures customers in and in turn makes them shop. Due to COVID, Costco's food court menu has been severely shorted. Fan favorites, such as the $1.50 hotdog with a free drink, chicken bake, and pizzas are still available. However, they are not the same products anymore. The hot dog, although still delicious, has a smaller bun. The chicken bake is completely different now. It looks more machine-made, and according to my father, does not taste the same. This really disappoints me, as the chicken bake is my absolute favorite item on the menu. The pizzas are only offered in cheese and pepperoni; the combo flavor has been kicked off. This also disappointed me because I only like the combo pizza. In addition, there are self checkout kiosks where you order and pay, then go up to the window to pick up your food. Other than the food, Costco is still the same. I think life will only be normal again for me when I can go to Costco on the weekend, shop and nibble on the free samples, and still leave room for a chicken bake and combo pizza to go. -

My 2020 Thanksgiving
This year has been really crazy and hectic for everyone. With Covid-19 going on, the holidays sadly have to be downscaled. So this year I had Thanksgiving with just my household. For dinner we had chicken instead of turkey because of late planning hoping for a change to be with our entire family. I spent most of Thanksgiving alone in my room just playing video games by myself because I was sad that my younger cousins and the rest of family. Overall we still had a great Thanksgiving and had a delicious feast. -

The great costco chicken shortage
My partner and I went to Costco to do regular grocery shopping for the week when we stumbled on the emptiest isles we have ever seen at any Costco. I remember turning to my partner and saying “This feels unreal. I have never seen a store this empty and I don’t think that I ever will again”. It was still March, and my partner was just told by his job to stay home and that the office would be closed for a while until Covid was under control. We didn’t know at that time seven months later he would still be working from home. It was eerie being in a store that was so empty and it is hard to explain what it felt like to see that. It was at a time of high panic for others but I hadn’t felt that same panic until that moment. I was very worried we wouldn't be able to get chicken for the foreseeable future and I didn’t know what we were going to do. I panic purchased a five pound bag of dry pinto beans that are still living in the back of a cupboard in my kitchen, unopened, on that trip. I think of my quarantine experience in multiple stages, the first to being before Costco, and after the great Costco chicken shortage. I think other people felt the same way I did; After they saw people panic buying, they started panic buying or fretting more than they may have been in the months before quarantine. The beginning feelings of panic did do good for me though, they made me more conscious of what we are eating and how much food we actually buy. Life of a Homeshcooler
- In times of covid I am not as social in person but have switched my social online with friends playing games and D&D through, discord, zoom and text. -Before covid I had a schedule of when I went to classes, co-ops and saw my friends. Social is now more erratic because everyone is home and schedules are so varied. This makes it hard to talk to friends. So now I have to adapt more to others schedules in order to spend time online with friends. -Because of the way we socialize I spend more time than normal online. -My homeschool life however has not changed that much, probably do more academics than before. I have been taking multiple online class over the years so when covid happened things didn’t change that much for me academically. -Another positive is that my personal library has expanded because getting to the library and picking out books is limited since they aren’t open and only allow curbside pick up. -Got more chickens, since we are home all the time. -Since I don’t leave the house very often, I have been able to get more schoolwork done. -Since I am home more, I have more time for hobbies and have taken up learning blacksmithing. -
